Cooked products : liver mousse, West-Indian black pudding, thick-fat streaky bacon pork belly with parsley, brawn, knuckle of ham, knuckle of pork, salted streaky bacon,galantine, trotters, ears.

Smoked products : pork belly, sausage,saucisson, pork shoulder, knuckle of pork.

The traditional rillettes are cooked
in cast iron pans for 19 hours.
